Shades and Scents: The Story of Wine

The Enology Lab presents two interactive experiences to uncover the science hidden in wine. In the first experiment, we will show how anthocyanins, the natural pigments of grapes, change color depending on pH: visitors will observe this chromatic transformation in a series of beakers with aqueous solutions. The second experiment focuses on aromas: through a fun blind test with vials containing typical wine scents, participants will be challenged to recognize and identify different olfactory notes. An opportunity to discover that both chemistry and sensory perception are essential and inseparable elements to be considered side by side in scientific research in the field of enology.
